Creamy Chicken Caesar Salad Dressing

Love Chicken Caesar salad, but worried about the calories in the dressing?

Normal salad doesn’t taste as great without it. Have your salad-dressing and all- by making this homemade healthy version.

For the salad, toss together grilled chicken and lettuce leaves (or substitute with spinach). Create a healthier crouton by toasting bite sized pieces of cauliflower or gluten free bread in the oven until crisp. Banters can top with parmesan cheese.

  • 2 eggs
  • 2 cloves garlic
  • 1 tablespoon lemon juice
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 2 cups olive oil
  • 1 tablespoon apple cider vinegar
  • 28 grams anchovies

Combine eggs, garlic, pepper, salt, lemon juice, vinegar and anchovies in a large jar.

Using a handheld blender , whizz the ingredients until smooth

Slowly pour in the olive oil while moving the blender up and down, until all the olive oil is incorporated into the mixture.

Drizzle over your chicken salad.
