Lettuce Be Breadless Taco

On a low carb diet?

Ditch the chicken, broccoli and brown rice. Add this lettuce leaf taco to your lunch time menu.

With the rise of low carbohydrate diets, everyone is looking at how they can enjoy their favourite dishes without using bread. Try this gluten- free taco. Step it up a notch by using ostrich or turkey mince. You can also dice chicken breast for another healthy version.

  • 225 grams mince
  • ½ cup chopped onion
  • 1 can diced tomato
  • 1 can tomato puree
  • ½ teaspoon ground cumin
  • 1 teaspoon chilli or curry powder
  • ½ teaspoon mixed herbs
  • 1 head of lettuce or large fresh spinach leaf
  • ¾ cup shredded cheddar cheese
  • ¾ cup diced tomato
  • ¾ cup salsa
  • ¼ cup diced red onion
In a pan heat the oil and fry the onions and garlic until soft. Add the mince, curry powder and tomato pure. Cook for an additional 10 minutes. Add the diced tomato, cumin and mixed herbs. Allow to simmer until the mince is cooked through. Season with salt and pepper. If you are taking this to work, store the toppings separately until you’re ready to eat. Assemble the taco by placing a heaped tablespoon of the filling inside the lettuce or spinach leaf. Add the toppings you want and serve.
