1 bunch blanched asparagus, woody ends removed 1/2 cup shaved or grated Parmesan 2 tablespoons extra virgin olive oil 4 slices whole grain toast Freshly ground black pepper Bring a small pot of salted water to a boil, and drop in the asparagus. Allow to boil for 3 to 5 minutes, depending on size of asparagus, until bright green and tender. Drain and pat asparagus dry. Drizzle 1/2 tablespoon of olive oil on each slice of toast.
